As the leaves are falling and Autumn is taking center stage, the pumpkins, marrows and tubers will be finding their way onto every shopping shelf and dinner table across northern Europe and the US.
What shouts Autumn more than a good old pumpkin pie? We have a delicious recipe for you to try that will really put a smile on your face as soon as you bite into it.
Here’s the most awesome organic pumpkin pie recipe you’ve ever tried! We can vouch for it, well my kids can certainly!
Organic Pumpkin, Ginger and Cinnamon Pie
2 tspn ground cinammon
1 9 inch organic, deep dish pie crust
2 whole free-range eggs
1 tspn ground ginger
1 tspn nutmeg
4 cups organic pumpkin puree
1/2 tspn salt
14 ounces condensed milk (sweet)
1. Preheat oven to 425 degrees
2. Combine pumpkin, condensed milk eggs and all the spices in a large bowl
3. Mix thoroughly with a wire whisk
4. Add pumpkin mixture to the pie crust
5. Bake in the over for 15 minutes then reduce the heat to 350 degrees and bake for another 35 to 40 minutes or until a knife inserted comes out clean

This is a great tip sent in by one of readers and makes a big difference in taste – in a medium pan over a low heat, heat the pumpkin puree, spices, and salt. Heating the pumpkin puree and the aromatics melds the flavors together nicely. Pour the warm mixture out into another bowl, and let it cool down before adding the condensed milk and eggs.
This tiny little change will also make the pumpkin taste as if it’s fresh from the ground, certainly if you’ve used tinned organic pumpkin puree! My family and I love this recipe, try experimenting with wholemeal flour to give an earthier, richer taste.
